Compost Production SOP — Phase-1 and Phase-2 for Button Mushroom

Mushroom compost is produced in two stages, in one cycle of 15–16 days from pre-wetting to spawning. After pre-wetting from Day 0 to Day 3, Phase-1 is an aerobic fermentation of wheat straw, chicken manure, gypsum and urea in aerated bunkers from Day 3 to Day 9, turned on Day 3, 5 and 7, producing a dark, ammoniacal, uniformly wet compost at 68–72% moisture. Phase-2 is an indoor controlled stage in a pasteurisation tunnel or room from Day 9 to Day 15: 6–8 hours at 58–60 °C to pasteurise, then 4–6 days of conditioning at 45–50 °C to convert free ammonia into microbial protein. Correctly finished Phase-2 compost is odour-free at below 10 ppm ammonia, 66–70% moisture and pH 7.2–7.8, and is cooled and spawned on Day 15–16.

Spawning and Spawn Run SOP — Dosage, Filling and Colonisation

Spawn is mixed into Phase-2 compost at 0.5–0.75% of wet compost weight (5–7.5 kg per tonne), filled at 90–100 kg per square metre of bed on 7-tier racks, and colonised for 12–16 days. Hold compost temperature at 24–25 °C, air temperature at 22–24 °C, relative humidity at 90–95% and CO₂ between 5,000 and 15,000 ppm with minimal fresh air. Spawn run is complete when white mycelium is visible throughout the bed and reaches the polythene or bed surface.

Casing and Pinning SOP — Casing Soil, Ruffling and Flush Initiation

Casing is a 4–5 cm layer of pasteurised, pH 7.5–7.8 soil — usually coco peat with farmyard manure or spent compost plus lime — applied over a fully colonised bed. The mycelium recolonises the casing over 7–10 days at 24–25 °C, is then ruffled, and pinning is triggered by airing down: air temperature to 17–18 °C, CO₂ from above 5,000 ppm to below 1,000 ppm, and RH to 88–92%. Pinheads appear 5–7 days after airing and the first flush is harvested 18–21 days after casing.

Climate Control SOP — Temperature, Humidity, CO₂ and Airflow

A button mushroom grow room is run to three stage-wise setpoint groups. Spawn run: air 22–24 °C, RH 90–95%, CO₂ 5,000–15,000 ppm, minimal fresh air. Case run: air 24–25 °C, RH 92–95%, CO₂ 5,000–10,000 ppm. Cropping: air 16–18 °C, RH 85–90%, CO₂ below 1,000 ppm with fresh air at roughly 5–8 m³/hour per square metre of bed. Air is delivered through ducting above the racks so that every one of the 7 tiers sees the same conditions.

Hygiene, Pest and Disease SOP — Prevention, Detection and Response

Mushroom farm hygiene is a prevention system, not a spraying schedule. It is built on four controls: a sealed envelope with insect screens on all fresh-air intakes, a one-way clean-to-dirty movement flow with footwear change and foot dips at every room, pasteurised compost and casing, and a cook-out at 65–70 °C for 8–12 hours after any diseased crop. Diseases are managed by immediate localised salting of patches, never by disturbing them, because Trichoderma, Verticillium and Mycogone all spread as airborne spores.

Harvesting, Grading and Cold Chain SOP — From Bed to Buyer

Button mushrooms are picked when the cap is closed and the veil is unbroken, at 25–45 mm cap diameter depending on the buyer's grade. Mushrooms are twisted and lifted rather than cut from the bed, trimmed of casing at the stem, graded, and moved to pre-cooling within 30 minutes of picking. Pre-cool to 2–4 °C, pack in vented punnets or 5 kg crates, and hold and transport at 2–4 °C. Correctly handled, shelf life is 5–7 days; a break in the chain reduces it to 2 days.
