Operations SOP — in short
Button mushrooms are picked when the cap is closed and the veil is unbroken, at 25–45 mm cap diameter depending on the buyer's grade. Mushrooms are twisted and lifted rather than cut from the bed, trimmed of casing at the stem, graded, and moved to pre-cooling within 30 minutes of picking. Pre-cool to 2–4 °C, pack in vented punnets or 5 kg crates, and hold and transport at 2–4 °C. Correctly handled, shelf life is 5–7 days; a break in the chain reduces it to 2 days.
Why this procedure matters
Mushrooms lose value faster than almost any other fresh produce. A mushroom at 20 °C respires roughly four times faster than the same mushroom at 4 °C, and the difference shows up as browning, cap opening and weight loss within hours. On most Indian farms the yield is not the problem — the value lost between the bed and the buyer is.
This SOP covers the whole post-bed chain: picking maturity and technique, flush management, trimming and grading, pre-cooling, packing formats, cold storage and dispatch. The parameters here are what determine whether a farm sells at the premium grade price or at the bulk rate.
It also covers the record-keeping that organised buyers require. A farm supplying modern trade will be audited on temperature records and chemical application logs, and the farms that hold those records get the better contracts.
Step-by-step procedure
1. Set the picking maturity standard
Agree the grade with the buyer before the crop is ready, not after. Standard Indian grades run roughly: 25–35 mm as premium button, 35–45 mm as large, and above 45 mm or with a broken veil as processing or bulk grade. Once agreed, the standard is displayed physically in the room with a sample gauge, because verbal standards drift within a week.

2. Picking technique
Hold the cap, twist gently and lift — do not cut standing mushrooms out of the bed and do not pull straight up, which tears the casing and disturbs neighbouring pins. Fill the gap left behind with a little casing so the surface stays level. Pick with clean hands into clean crates, and never overfill a crate, because the mushrooms at the bottom bruise under the weight.

3. Flush management and picking rounds
Pick in rounds through the day rather than stripping a bed once. During the peak of a flush this may be two or three rounds daily. Pick the whole flush cleanly — leaving over-mature mushrooms on the bed suppresses the next flush and provides a substrate for disease. Expect three commercial flushes at roughly 50%, 30% and 20% of total yield, with 7–10 day intervals.

4. Trimming and grading
Trim the stem flush of casing with a clean knife immediately after picking. Grade by size and quality into the agreed classes, and separate anything with blotch, mechanical damage or an open veil into the processing line. Trimming and grading happen in the packing hall at controlled temperature, not on the farm floor in ambient heat.

5. Pre-cooling — the critical 30 minutes
Get the field heat out fast. Move picked mushrooms into pre-cooling within 30 minutes of picking and bring the product core to 2–4 °C. This single step accounts for most of the achievable shelf life. Size pre-cooling capacity at roughly 1.5× the peak daily harvest, because peak flush days are 60–80% above the average day and it is the peak that sets the equipment requirement.

6. Packing
Pack after pre-cooling, not before, so condensation does not form inside the pack. Retail packs are typically 200 g or 500 g vented punnets with cling or perforated film; bulk goes into 5 kg vented crates or corrugated boxes. Vents matter — a sealed pack accumulates CO₂ and moisture and browns within a day. Label with the pack date, grade, weight and farm code for traceability.

7. Cold storage and dispatch
Hold at 2–4 °C and 90–95% RH. Do not store mushrooms with strongly aromatic produce — they absorb odours readily. Load into a pre-cooled reefer or insulated vehicle; loading a cold product into a hot vehicle undoes the entire pre-cooling step in fifteen minutes. Record dispatch temperature on every consignment.

8. Yield and quality reconciliation
Reconcile every cycle: total harvest by flush, yield per square metre of bed, biological efficiency against compost weight, grade-wise split and rejection percentage. A well-run climate-controlled farm targets roughly 18–22 kg per square metre of bed across three flushes, or 20–25% biological efficiency against fresh compost weight. Falling short is a compost, spawn or climate problem, and the reconciliation is what tells you which.

Daily and per-cycle routine
- Brief pickers on the grade standard at the start of every shift and check the first crate of each picker.
- Record harvest weight by room, flush and grade at every round.
- Log the time of the first crate into pre-cooling for each round.
- Record cold store temperature at least twice daily and on every dispatch.
- Disinfect crates, knives and trolleys at the end of every picking shift.
- Weigh and record rejections separately so the rejection percentage is visible per cycle.
- Reconcile yield per square metre and biological efficiency at the end of every cycle against the compost batch number.

Troubleshooting

Mushroom farming setup in India splits into two halves — what you build, and what you run. That is why mushroom farming equipment cost can only be estimated once room size, room count, bed area and the site's peak summer temperature are fixed. Any single "cost per room" number quoted without those inputs is misleading — an 18×30 ft room and an 18×60 ft room differ in panel area, racking metres and machine tonnage, and the same room in a hotter district needs a larger machine to hold 16–18 °C during cropping.
