    What is the shelf life of fresh mushrooms — and how do I get to 14 days?

    Loose at ambient: 1–2 days. Cling-wrapped punnet at 2°C: 5–7 days. MAP punnet (5–10% O₂ + 5–15% CO₂) at 2°C: 10–14 days. IQF frozen at -18°C: 12–18 months. To hit 14 days reliably you need: forced-air pre-cooling within 2 hours of harvest, MAP packaging, a packing room kept at 8–12°C, and unbroken 0–2°C through the reefer van and retailer cabinet.     Cold-Chain Discipline
